Primary Fermentation

Thoroughly wash hands and gather all materials from the kit.

Fill a container with 2 litres of filtered water.

Heat the container of water in a microwave for 3 minutes.

Empty heated water into the sanitized primary fermenter bucket. Slowly stir in the package of bentonite until the water looks muddy and everything is mixed in.

Empty the whole bag of juice into the bentonite mixture.

After pouring the juice, fill bag with filtered water to rinse everything out into the primary fermenter bucket.

After all juice is rinsed into the bucket, fill bucket to the ridge in the bucket with filtered water.

With large spoon, thoroughly mix contents for about 3 minutes.

Using a wine theif, draw a sample of the juice and put into a hydrometer.

With juice in hydrometer, measure the specific gravity. It should read between 1.080 - 1.100 depending on the type of wine.

Sprinkle the packet of yeast over the top of the juice in an even layer.

Fill a bung with filtered water and a metabisulphite tablet to ensure bacteria does not grow.

Lastly, stick the bung in the cover of the bucket and place on bucket.
