After 10 days, the specific gravity should be about 0.996 or lower. Next, you'll need to syphen some of the juice into a smaller bottle so it doesn't foam up too much while mixing.

Using a drill with a long paddle attachment, mix contents of carboy for 15 minutes to drive off CO2. 
Take out the potassium metabisulphite and potassium sorbate packets. 
Next, dissolve the two packets in 1/2 cup filtered water and stir vigorously.

Using a funnel, empty mixture from the measuring cup into the carboy. 
Get the chitosan chitine packet ready. 
Gently empty contents of the packet into the carboy through the funnel. 
Mix all the liquid in the carboy again thoroughly with the drill-mounted stirring device. 
After mixing , top off the carboy with the reserved juice from the beginning. Allow wine to clear for 8 days.
